Preparation :
Prepare the eggplants:
Preheat the oven to 200°C. Slice the eggplants and brush them with olive oil. Season with salt and pepper.
Cooking :
Arrange the slices on a baking sheet and bake for 15 minutes.
Garnish:
Spread the tomato puree on each slice of eggplant, add the grated mozzarella, capers and a black olive.
Gratin:
Return to the oven for 10 minutes, until the cheese melts.
Service :
Sprinkle with fresh basil leaves before serving. Perfect as a starter or side dish.
