Homemade French Fries

Fill a large pot or Dutch oven with vegetable oil, leaving enough room for the potatoes.
Heat the oil over medium-high heat to 325°F (163°C).
First Fry:
Working in batches, carefully add the potatoes to the hot oil.
Fry for 5-7 minutes or until they start to turn golden.
Remove and drain on a paper towel-lined baking sheet.
Increase Oil Temperature:
Increase the heat to 375°F (190°C).
Second Fry:
Return the partially fried potatoes to the hot oil in batches.
Fry for 3-5 minutes or until golden brown and crispy.
Remove and drain on a paper towel-lined baking sheet.
Season (Optional):
Toss the hot fries with the seasoning mixture, if desired.
Serve:
Transfer the fries to a serving platter.
Sprinkle with salt to taste.
Serve hot and crispy.
