Preheat your oven to 350°F (175°C).
In a large skillet over medium heat, cook the ground beef or turkey until fully browned. Drain excess fat.
Add the taco seasoning to the meat, following the packet instructions. Stir in black beans, corn, and half of the salsa. Simmer for 5 minutes to combine the flavors.
In a baking dish (9x13 inch), spread a thin layer of salsa on the bottom to prevent sticking.
Place two tortillas side by side on top of the salsa, covering the bottom of the dish as much as possible.
Layer with one-third of the meat mixture, followed by a sprinkle of cheese.
Repeat the layers twice more: tortillas, meat mixture, cheese.
Finish the top layer with tortillas, then spread sour cream evenly over them and sprinkle with the remaining cheese.
Bake in the preheated oven for 25-30 minutes, until the cheese is melted and bubbly.
Remove from the oven and let it rest for 5-10 minutes. Top with chopped green onions and cilantro before serving.
Variations & Tips
For a vegetarian version, you can substitute the meat with diced zucchini, bell peppers, and mushrooms. If you're a fan of spicy foods, add some diced jalapenos to the meat mixture. Also, try using whole wheat or gluten-free tortillas as a healthy alternative. Experiment with different cheeses like pepper jack for an extra kick!
