Chinese fried noodles with chicken

Instructions:
Cook the noodles: Cook the noodles in salted water according to the package directions, drain and set aside.
Sauté the chicken: In a large skillet or wok, heat 1 tablespoon of vegetable oil. Add the chicken strips and cook over medium heat until golden brown and cooked through. Remove from the pan and set aside.
Sauté the vegetables: In the same wok or skillet, heat the remaining oil. Add the onion, garlic, carrot and bell pepper (and broccoli, if using). Stir-fry the vegetables until slightly softened but still firm.
Add the noodles and chicken: Return the cooked noodles and sautéed chicken to the pan. Mix well.
Season: Add the soy sauce, oyster sauce, sesame oil and sugar. Stir well to evenly coat the noodles and vegetables with the sauces. Season with salt and pepper to taste.
Add the scallions: Just before serving, stir in the scallions.
Serving: Arrange the fried noodles on plates and sprinkle with toasted sesame seeds if desired.
