Breaded zucchini slices

Preparation:
Prepare the zucchini:
Wash the zucchini and trim the ends. Then cut them into thin slices, about 1/4 inch thick.
Set up the breading line:
Prepare three shallow bowls: one with flour, one with beaten eggs (add a little salt and pepper), and one with a mixture of breadcrumbs and parmesan cheese (if using). Mix the breadcrumbs with the dried oregano or basil, if desired.
Breading:
Dress each zucchini slice first in the flour, then in the eggs, and finally in the breadcrumbs. Press the breadcrumbs lightly to ensure they adhere well.
Frying:
Heat a generous amount of oil in a pan over medium-high heat. The zucchini slices should turn golden brown and crispy, about 2-3 minutes per side. Make sure the oil is hot enough so that the zucchini doesn't float in the pan, but also doesn't burn.
Drain:
Place the breaded zucchini slices on a paper towel to drain off excess oil.
Serve:
Serve the zucchini slices warm as a snack or side dish. They go well with a yogurt dip, tomato sauce, or just with a tangy salad.
