We start preparing the meat and then we will make the cuts on the edge of the slice of ossobuco to prevent it from bending and remain as flat as possible.
Then we cover with a little flour on each side and then seal in the saucepan, placing it in the part.
Next, in a pot with a drizzle of olive oil and a high heat, seal the slices on both sides until golden brown.
Once golden, we touch the heat and touch the part.
Still in a pot we brown the onion, the leek, the carrot cut into slices, the garlic cloves, and add the tomatoes without the skin and seeds. We continue to brown for another 5 minutes or so.
Next step, we add to the pot the slices of osso buco, the glass of red wine, the peppercorns, the bay leaves and the cloves, it is optional. We will leave it on high heat until the alcohol evaporates.
When the alcohol has evaporated, add the vegetable or meat broth and cook on medium heat for about 2 hours. We always pay attention so that if no liquid dries or fills, it is necessary to add another layer.

Tips and tricks
If we prefer to use the pressure pen, the sewing time will be about 30 minutes.
Remember that the ossobuco slices will be ready soon, we pour them adding the sauce and the natural meat juices and accompany them with vegetables, rice or mashed potatoes.
If we add a little sauce or juice from the ossobuco meat, we can combine it with the corn food. It is a simple trick, in a container of cold water add a cup of corn and a good compound to dilute it. Then we add it to the sauce in the pot and cook it without adding a little.
The wine can be white, sparkling or red. But it must be good wine, the same wine we use to accompany these delicious dishes.
